Have you ever had great quinoa? Once you’ve had a great meal with quinoa you’ll never try pasta again. Quinoa has less carbs, more fiber, and less calories than traditional pasta.
This dish is designed for one, to make it for two, double it.
1. 1 bushel of spinach
2. Crumbled feta
3. 1/2 cup of quinoa
4. 1/2 cup cucumber
Add quinoa and bring 1 quart of water to boil
Turn the heat to medium, cover with lid and leave to simmer for 15-20 minutes until cooked
Meanwhile, chop cucumber and chop feta into blocks
Tear the spinach, quickly fry in extra virgin olive oil for 1-2 minutes
Drain the quinoa, add to the wilted spinach, and mix together
Add quinoa and spinach to bowl, add crumbled feta, and add chopped cucumber. Serve
